What is the point in being a God without human beings?

Well, since I think humans made up the "god" concept, I don't think there is any point.
On the other hand, if humans didn't make up the "god" concept, and there really is a god, I think it would make perfect sense to be god and not have human beings. Just plants and animals.
And.. if I was god. (I have often considered this concept).. if I was God, one of the first things I would do is get rid of the human beings.. if not all of them, then at the very least most of them.
So that's my answer - no and yes.
My concept of God is less of a being and more of an invisible power force. I feel that the world has an underlying power force that runs through all living creatures, giving them the will to live, giving them the instincts they need to survive. So this force of nature, to me, would be present even if there were no humans in existence. It is the life force that not only controls the animals and plants but the sea and the soil erosion and the rocks that fall. I know a lot of people see God as a man (or woman) "up there somewhere" with a long flowing robe who knows all. I think people have personified God just so the concept could be understood - I think it's more difficult to understand an underlying, unpersonified life force of love, life and destiny. I hope this all makes sense - my answer is, there doesn't need to be a point to be a "god" - it all "just is" and would be with or without people.
If there is a God, He/She/It will be here long after humans destroy themselves.
